Not strictly statistical, but CRB's non-partisan reports provide a variety of data on topics of special interest to the state. Topics range from foreclosure rates to the effectiveness of various government programs.
Public Policy Institute of California
Like the CRB, this non-partisan research group produces reports on a wide variety of California issues, many of which include statistics.

Gateway for statistics on students, faculty, and outcomes in the CA Community College system.

California Public Policy Institute Surveys
Statewide surveys of public opinion about California politics, the economy, social issues, and more.
